A Cook Team Meeting (only 2 people allowed per team, must be over 18 years old) will be held on Saturday morning, September 18, 2010 at 9:00am at the Main Stage Area (Big Tent) in Campground #1. All teams must be present. Food 1. All food for the contest must be prepared using logs, wood chips or charcoal-fueled fire - no gas grills. You may use any type of grill or you may choose to cook it over an open campfire as long as no gas is used. You may use charcoal, wood or a combination of these two. 2. Consider cooking your favorite recipe, but all recipes must be prepared from scratch. All ingredients must be listed in the recipe. No more than 2 items in your recipe can be a store-bought packaged mix (such as cake, brownie or pudding mixes) or product. Judges can tell the difference between a bottled sauce and a homemade sauce. Rubs, seasonings and marinades are allowed to be used prior to the set cooking time. Mustard, ketchup, candy, and flavorings are not considered pre-packaged items. Garnishes and other food are allowed on the plate but must be included in the recipe. If you have a question about your recipe, please call 866-354-0003 for a ruling. 3. No fire or preparation can begin until 9:45am, Saturday, September 18, 2010 when the horn sounds to begin cooking. A plate will be given to you at the Cook Team Meeting on Saturday, September 18, 2010. You must present your recipe on this plate. No decorations or extra items may be placed on the plate unless they are a part of the recipe and are listed in the recipe. This allows a fair playing field for all Cook Team entries. 5. Entries must be brought to the Main Stage Area on Saturday, September 18, 2010 between the times of 12:15-12:30pm. No entries will be accepted before this time. Look for the sign that says "Entries Here" when coming to the Main Stage Area. Further instructions will be given at the Cook Team Meeting on Saturday. 6. You will receive an entry ticket in your registration packet that must be presented when you bring your dish to the Main Stage Area on Saturday.
Judging 1. A field judge will be visiting your campsite throughout the 2-hour cooking period to ensure each team follows their recipe and to verify that teams are in compliance with rules and regulations. 2. You must bring your own cooking gear, utensils, tables and set up. 3. Recipes will be judged on creativity, taste and presentation. Scoring will be done on a scale basis of 1-10 for taste and 1-5 for creativity and presentation. A perfect score of 20 is possible for each dish. (NOTE: This scoring indicates a change in previous information). 4. Judges are aware that the time to transport the food to the judging area may cause a change in temperature for certain recipes. Judges will not take off any points for a recipe that is not at its normal serving temperature. Miscellaneous 1. Please be familiar with all outdoor cooking rules and regulations, especially appropriate temperatures for meat and fish, posted by the S.C. Department of Health and Environmental Control at www.scdhec.gov. 2. The participation fee is $45 for a recipe. You may enter only one recipe in one category. 3. Other family members or friends can purchase food, also. 5. If you have any questions whatsoever about the ingredients in your recipe, please call us at 866-354-0003 and we will give you a ruling. 6. Have fun and be creative!

In the rules regarding food, it says that no more than two items in the recipe can be store bought or prepared mixes or packages, what does that mean? Because this is a contest that is based on a timed project, creativity and how one cooks in the outdoors, it is hoped that most of the ingredients that are used in the recipes are not pre-packaged items such as bottled sauces, canned gravy, cake, pudding and brownie mixes, or artificial condiments. Mustard, ketchup, chocolate and other candy and flavorings are not considered pre-packaged. Garnishes and other food are allowed on the plate but must be included in your recipe.
